Pastorutti is an Italian surname from Friuli, documented by De Stefani in his study of the surnames of Carnia as the Friulian form of the broad onomastic group of Pastore. It derives from the occupational name pastore (shepherd, the one who leads the flock, from the Latin pastor), already common in the 13th century in the Latinised forms Pastor, Pastorius and Pastorinus.

Its distinctive feature is the ending in -utti, characteristic of Friulian onomastics, which designates the descendants of the Pastore family. De Stefani records it among the current surnames of Udine, alongside Pastore, Pastorelli, Pastorello, Pastori, Pastorini and Pastorino, and offers as an antecedent the mention of a Leonardus quondam Nicolai Pastoris, of Enemonzo, in a document of 26 September 1569.

The distribution of the surname is concentrated in Carnia and in the Udine area.
